Broome-Tioga BOCES Culinary Arts Students and Frank’s Italian Restaurant worked together to feature a couple of student-inspired recipes on their menu after participating in their program’s “Restaurant Wars.” 

In January, teams of students collaborated with several local restaurant owners to create recipes that were judged by a panel of experts. Some owners decided to incorporate the recipes on the menu.

“We sat down as a group and we took a look at Frank’s menu to see what really wasn’t there. So we then came up with a shrimp mac and cheese garlic bread bowl,” said John Cook, a Senior with the BOCES Culinary Arts Program. 

Frank LoPiccolo then gave his advice at lunch on Wednesday with the students, changing the garlic bread bowl to a parmesan crust and showing the students how to make it. The dish will be added to the menu next week. 

Pastry Chef Gabriella LoPiccolo also created a rendition of the student’s mocha mousse that will be featured on the Valentine’s Day menu at Frank’s. 

The connections made from the “Restaurant Wars” even led to LoPiccolo hiring three students, including Cook.

“They say anything they think which is very refreshing and they’re very expressional in their thought. I think it’s wonderful that they’re excited,” said LoPiccolo. 

BOCES Culinary Arts Teacher Rachel Patinka says the program hopes to continue “Restaurant Wars” next year and work with new restaurants.
