1 pound frozen cod
2 tablespoons Old Bay seasoning
1 (10 ½-ounce) bag packaged sesame sweet Asian salad kit
6 white corn tortillas
3 ounces H-E-B That Green Sauce
Instructions: Allow cod to defrost overnight in the refrigerator, or soak in bowl of cold water to expedite thawing process.
Cut into 2-inch chunks, pat the fish dry with a paper towel and apply Old Bay seasoning to both sides.
Open the sesame sweet Asian salad kit and mix the salad and dressing, setting aside the packages of sliced almonds and crispy wonton strips for future use. Refrigerate seasoned fish and salad for at least 30 minutes.
Spray a nonstick pan with cooking spray and heat, covered, over medium for 5 minutes. Add cod to the pan carefully so the pieces don’t touch one another. Cook for 10 minutes covered (no need to flip it), until the fish takes on a nice golden-white color.
Remove fish from pan onto a plate lined with a paper towel, and allow to rest for 5 minutes. During that time, warm the tortillas.
Place pieces of cod into a tortilla, add a scoop of Asian salad and top with That Green Sauce.
Tip: Tacos pair really well with traditional or bacon-wrapped sweet corn.
